One 40 oz can sweet potatoes drained 2 cups chunky apple sauce 3 eggs, separated 1/3 cup maple syrup 1/4 cup butter, melted 1 tsp grated lemon rind 1/2 tsp nutmeg 1/3 cup sliced almonds
Mash sweet potatoes with electric mixer. Add apple sauce, egg yolks, syrup, butter, lemon rind, and nutmeg and combine thoroughly. Fold in stiffly beaten egg whites. Pour into greased two-quart baking dish; sprinkle almonds overtop. Bake at 350 F for 40 to 45 minutes or until lightly browned.
