The Best Oil for Your Health (and You’ve Never Heard of It)
By Kelley Herring
If you think all vegetable oil is created equal, think again. In fact, if you’re using the wrong oils in your cooking, you could be aging faster than you should, developing serious hormonal problems, “gumming” up your pipes, and even encouraging cancer. Today, I’d like to introduce you to one of the healthiest oils you can eat – avocado oil. Here are four good reasons to stock up on this age-defying ingredient: * Trim your tummy. Avocado oil is one of the richest sources of monounsaturated fats on the planet. These healthy fats help lower insulin (aka, the fat storage hormone) and help reduce belly fat. * Saute safely. Thanks to having a flashpoint of 500 degrees F, this full-flavored oil is excellent for cooking at high temperatures. * Up your antioxidants. Avocado oil enables your body to absorb 17 times more carotenoids – the powerful antioxidants that give your salad its vibrant green, yellow, and red colors and guard your cells from free radical damage. * Guard your vision. Avocado oil has twice as much lutein as olive oil. Lutein is a nutrient that provides strong protection against macular degeneration – the leading cause of blindness. With so many delicious uses – and so many reasons to use it – you need to make this “miracle” oil a mainstay in your healing kitchen. Look for the Olivado brand at Target. [Ed Note: Most so-called "healthy" oils are loaded with free radicals, just waiting to be drizzled on your salad so they can attack your DNA. But if you're a savvy shopper, you can spot them from a Texas mile. Kelley Herring's new book, Your Plate, Your Fate, will show you how.]

Avocados find their roots in Central America. Also known as Persea americana the avocado was labeled the ''fruit of kings''. These luscious pear-shaped wonders are considered one of the most nutritious fruits on earth. That's because avocados contain at least 75% monosaturated fats. The edible pulp of the avocado which surrounds the seed contains from 8 to 30% of a non-drying oil. Oil is separated by dehydrating the pulp then pressing. Avocado oil has a light but unique flavor that makes it an excellent choice for salad dressings or for use as a condiment. Refined avocado oil has the highest smoke point of any plant oil (255 C) so it is useful for high heat cooking. It can be infused with lemon rosemary basil or chili. It is a good source of monounsaturated fat and vitamin E which makes it nutritionally beneficial. This unique nutty-flavoured oil may be used in whipped potatoes drizzled over steamed vegetables in vinaigrette dressings for sautéing soups ands stews. Premium avocado oil is cold-pressed much like olive oil and is rich in vitamins E D and E and known to lower LDL levels. Studies conducted show that avocado oil reduces the risk of type 2 diabetes and prostate incidence. It is free of trans fatty acids and cholesterol-inducing fats. Avocado oil has a higher viscosity than olive oil and texturally is more pleasant than all other oils. Medium to heavy weight oil suitable for massage. Use up to one-fourth to a cream or salve base. Contains vitamins A B and D and is rich in lecithin. Has beneficial effect on dry skin and wrinkles. Add to soap recipes for a more moisturizing bar. Try it in a gentle baby soap or maybe a shaving soap for true luxury! We often find avocado oil in expensive creams and lotions. Or for the ultimate indulgence try a massage oil with avocado oil. This oil does not have a long shelf life.
