You can use either white or brown rice for this recipe.
Cheesy Confetti Rice
2 cups cold water
1 cup white or brown rice
1 tablespoon butter or margarine
1 teaspoon salt
1 package mixed vegetables
1 teaspoon dill
1/2 cup cheddar cheese
1 teaspoon ground black pepper
1 teaspoon onion powder (optional)
1/4 cup sliced mild canned jalapenos (optional)
Cooking Directions:
Mix water, rice, butter/margarine and 1 teaspoon salt in a saucepan. Cover with a tight fitting lid. Bring to a boil then reduce heat. Cook 15 minutes without lifting the lid to peek. Remove from heat and let stand covered for an additional 10 minutes. Mix in 1 package cooked mixed vegetables and 1 teaspoon dill. Top with cheddar cheese. Cover 3-5 minutes or until cheese melts.
