This term is used in place of naming the commonly seen reference to stores' names. I suppose it's due to not being vulnerable to attracting their attention in case and avoiding potential legal action or criticism. I'm sure you know about and even are a member of one; inventory is stacked in pallets to the roof, greeters and food samplers, exit door checkers, sparrows flying around in the rafters, etc. etc.
