Whether you are a vegetarian or just want a vegetable recipe as a side dish, this one sounds good.
California Vegetable Casserole
16 oz. package frozen California vegetables (cauliflower, broccoli, carrots)
8 oz. package Velveeta cheese, cubed
1 cup seasoned croutons
1/2 cup margarine or butter
dash of salt, pepper, and nutmeg
Instructions:
Toss together frozen vegetables, cheese, and croutons. Place in buttered casserole. Melt margarine or butter and pour over top. Cover and bake at 350 degrees for 15 minutes. Remove cover and bake 35 more minutes.
