I am trying to list healthier recipes for the New Year. Here is another one that sounds good. You could substitute brown rice if you want to make it even healthier.
Rice Pilaf with Toasted Pecans
2 cloves garlic, minced 2 teaspoons olive oil 1 cup uncooked long grain white rice 2 1/2 cups reduced-sodium chicken broth 2 teaspoons finely shredded lemon peel 1 1/2 cups sliced fresh mushrooms 1/2 cup thinly sliced green onions (4) 1/4 cup chopped red sweet pepper 1/8 teaspoon black pepper 2 tablespoons chopped pecans, toasted
Directions:
In a medium saucepan cook garlic in hot oil for 30 seconds. Add the rice and broth.Bring to boiling, reduce heat. cover and simmer for 10 minutes.
Add the lemon peel, mushrooms, green onions, sweet pepper, and black pepper. Cover and cook 10-15 minutes more or until liquid is absorbed and rice is tender. Stir in toasted pecans.
