Hearty Bean and Rice Soup
1 cup chopped celery (2 stalks) 1 cup chopped onion (1 large) 2 cloves garlic 1 tablespoon olive oil 5 cups vegetable broth or chicken broth 1 cup water 1/2 cup arborio rice 3 medium tomatoes 1 medium zucchini 6 cups torn fresh spinach 1 15-oz can great northern beans, rinsed and drained 1/4 cup snipped fresh thyme 1/4 teaspoon cracked black pepper 1/2 cup crumbled feta cheese (2 oz)
Directions:
Cook celery, onion and garlic in hot oil until tender. Add broth, the water, and uncooked rice. Bring to boiling; reduce heat. Simmer, covered, for 15 minutes.
Meanwhile, chop the tomatoes; coarsely chop the zucchini. Stir tomatoes, zucchini, torn spinach, beans, thyme and pepper into mixture. Cook and stir until heated through. Top each serving with feta cheese.
