Ingredients:1 cup plain lowfat yogurt 2 scallion, sliced 1/8 tsp pepper 3/8 tsp turmeric 1/8 tsp cayenne pepper 1/2 Lbs. ground beef 1 Lbs. black beans, drained 1/3 cups onion, finely chopped 1 tsp unsalted butter Cooking Directions:Melt butter in a heavy nonstick skillet over medium high heat. Saute onion 5-7 minutes or until golden. Add ground round and saute 3-4 minutes or until meat is lightly browned. Stir in black beans, turmeric, cayenne and pepper and saute 3-4 minutes. Reduce heat to medium low. Stir in half the scallions. Saute 2-3 minutes, stirring constantly until scallions are softened. Remove from heat, sprinkle with remaining scallions and serve with yogurt.
