Here is another recipe that sounds yummy with several healthy ingredients. You can cut down on the sugar if you want less calories.
Honey Oatmeal Muffins
2/3 cup milk
1/3 cup vegetable oil
1 egg, beaten
1/4 cup honey
1 1/2 cups quick or old fashioned oatmeal, uncooked
1 cup all purpose flour
1/2 cup raisins
1/2 cup chopped nuts
1/3 cup brown sugar, firmly packet
1 Tablespoon baking powder
3/4 tsp. salt (necessary)
Cooking directions:
Preheat oven to 400 degrees.
Combine first 4 ingredients in a bowl. Combine remaining ingredients in another bowl. Stir in milk mixture, mixing just until dry ingredients are moistened. Fill 12 greased or paper-lined muffin cups 2/3 full.
Bake 15-18 minutes or until golden brown.
