This is another recipe my granddaughter got in her cooking class at school. It doesn't have much sugar so those who are looking for lower sugar recipes might like it.
Peanut Butter Haystacks
1 Cup butterscotch or chocolate chips
1/2 cup peanut butter
1/2 cup salted peanuts
2 Cups Chow Mein Noodles
Instructions:
Place chips and peanut butter in a microwaveable bowl. Microwave at 50% power for 3 to 5 minutes until most of the chips are shiny or soft. (Watch carefully, as the chips can burn).
Stir in peanuts and chow mein noodles. Drop by forkfuls onto wax paper. Cool until set.
Makes about 2 1/2 dozen (but I doubled the recipe and it made about that amount).
