SAUSAGE, PEPPER & CORNBREAD SKILLET PIE

This is easy, very yummy, I used Kielbasa sausage and spinach instead of chard.

1 large egg
1/2 cup grated Parmesan cheese
1 bunch Swiss chard, stems discarded, leaves coarsely chopped
1 large onion, sliced
1 pound Italian sausage links
1/2 cup milk
8.5 oz box corn muffin mix
Salt and Pepper
3 cloves garlic, finely chopped
2 large red bell peppers, sliced
2 tsp olive or vegetable oil

HEAT oven to 400 degrees. Heat oil in a cast iron skillet. Add sausage and cook, turning, until browned on all sides. Transfer sausages to a cutting board and cut into 1" pieces. ADD peppers and onion to the skillet and cook 4 min. stir in garlic. Add chard, 1/2 tsp salt and 1/4 tsp pepper, and cook until chard is beginning to wilt. Remove from heat and stir in sausage. IN A BOWL, whisk together corn muffin mix, Parmesan and 1/4 tsp pepper. Add milk and egg and mix to combine. Spread the batter over the sausage mixture, leaving a 1/2" border. Bake until golden brown and done, 20 min. then SERVE...
