Roast Beef Rool-Ups for Diabetics

2 tablespoons fat-free mayonnaise

1/2 teaspoon prepared horseradish

2 slices (about 1 ounce each) deli roasy beef

6 tablespoons crumbled blue cheese

2 thin slices red onion, quartered

1. Combine mayonnaise and horseradish in small bowl, spred over 1 side of each roast beef slice.

2. Top with blue cheese and onion. Roll up each slice tightly to make 2 rolls.

Makes 2 servings

Nutrients per Serving ( 1 roll up).

Calories: 124, Calories from fat: 51%, Total Fat: 7 g, Saturated Fat: 4 g, Cholesterol: 46 mg, Sodium: 567 mg, Carbohydrate: 4 g, Dietary Fiber: 1 g, Protein:  10 g
