Breakfast is two words put together to indicate the breaking of the fast. When one does not eat for many hours it is a "fast". Sleeping 8 or more/less hours means you are on a fast. When you awake you break the fast when you first eat. Therefore, breakfast is the first meal to start your day. We changed the pronuciation to brek-fst. A modern concept is to serve the first meal mid-morning combining breakfast (br) and lunch (unch) Thus we have the word brunch. Please submit your recipes for a favorite dish to serve for breakfast or brunch.

A favorite dish to serve at our Mennonite church camps is called "Baked Oatmeal". It is almost a cake but does not have the flour. This was given to me by Rochelle, the head cook at Camp Luz, Kidron, Ohio. She says it is a beautiful presentation for ladies brunches when yogurt topped with fresh fruit is the topper. BAKED OATMEAL Mix thoroughly: 2 Eggs beaten. 1 cup milk ½ cup veg. Oil ¾ cup brown sugar 2 tsp. Baking powder 1 tsp. Salt ½ tsp. Cinnamon Stir in: 3 cups quick oats Directions: Pour into a greased pan and bake at 350 for ~ 25 minutes Serve warm with milk. Also good with vanilla yogurt and strawberries or blueberries.

My favorite breakfast is a tomato/onion omelet.

Beat three eggs and cook in small frying pan with a pat of butter.  Add cheese of your choice, my preference is Swiss, fold egg into omelet, plate and add diced tomatoes, green onions, more cheese and sour cream.

You can substitute the butter with cooking spray, use low fat sour cream and cheese to lower calories and fat content.  This is a really tasty dish – especially if you use fresh vegetables.  Not too mention fast to prepare!

Mary,

I have to go with the omelete that Melissa has given instructions for.  My variation however is the following:

Farm fresh eggs and Jerky Direct hormone free Jerky.  My favorite is turkey terriyaki but recently I started using the buffalo o's which are a bit spicy if eaten by themselves.  In the omelet they are very sweet and your meal is healthy!

Of course as Melissa said, add your fresh veggies!

According to Kevin Trudeau, eating the right kind of breakfast(the above)can promote weightloss.

Ranch Raised and USDA Inspected Buffalo ! Hormone Free ! Beef and Turkey Jerky ! mmm mmm mmm ! Dried Fruit Jerky, healthy supplements and skin care line... I love this business ! We get to eat the delicious healthy jerky ! Breakfast Taco Wrap ! mmm mmm mmm 2 tablespoons Hickory Smoked Shredded Buffalo Jerky 2 tablespoons chopped green sweet peppers 1 tablespoon of chopped Scallions (green onion) 1/8 teaspoon crushed red pepper (optional) 2 eggs slightly beaten (from free range chickens if you ... can catch them and squeese out an egg or two) 2 tablespoons chopped tomato Few dashes of hot pepper sauce (red or green, optional) One warmed tortilla (whole wheat are great ! ) Add shredded jerky, scallions, green pepper, and crushed red pepper if desired. Saute in skillet for 1 minute, add EGGs cooking for 2 minutes or to consistency you like. Spoon onto warmed tortilla and roll up. Makes 1 serving for a healthy breakfast, lunch or dinner ! Robust Flavor and Healthy, Awesome Breakfast !
