Pat's FAVORITE Thanksgiving side dish ~~ Happy Thanksgiving!

Hi folks.  This is Pat's Good Old Fashioned GREEN BEAN with BACON Dish.

Uncle Carroll made this when I was a child.  His Green Bean with Bacon and Onion and Cranberry relish were mainstays.

I've made it for 20 years.  My nephews and niece didn't like it too much when they were little but now they DEFINATELY LOVE IT and would "throw a fit" if I didn't make it.

It's SO easy. If you increase recipe, add more bacon and onions in proportion to green beans.

Fry 6-9 strips of LEAN bacon (I use thick sliced, not fatty). Fry till crisp (tip, slice bacon to ends so it doesn't curl).  Put cooked bacon on a large platter with  paper towels to mop up grease. Cool bacon, and break in small pieces.

Dice a medium size white or yellow onion.  Fry onion in bacon grease and drippings till translucent in about 1/2" drippings. (It's hard to say how much to use.  Eyeball it). The bacon bits and grease add the flavor.

Open 5-7 (or more depends on amount of people) cans of regular sliced green beans. Drain water from 2-3 cans beans. Put beans with water, bacon pieces, grease and drippings, fried up onion in a large crock pot. Cook on high for 1-3 hours or until beans have cooked down. This can be cooked on stove too - just cook on low temperature SIMMER for hours. If there isn't enough liquid, add low sodium chicken stock.

I use pepper only as seasoning. Don't need salt as the bacon is so salty!

Hope I have described my cooking method properly.  I have made this for so many years, I can do it in my sleep.

I'm bringing ORANGE GLAZED CARROTS to sister's house for Thanksgiving today. The picture looks yummy.  Here's the recipe:

Orange Glazed Carrots

"A wonderfully easy glazed carrot recipe that the whole family will enjoy. Great for special occasions or an every day meal."

INGREDIENTS

  • 1 pound baby carrots
  • 1/4 cup orange juice
  • 3 tablespoons brown sugar
  • 2 tablespoons butter
  • 1 pinch salt

DIRECTIONS

Place carrots in a shallow saucepan, and cover with water. Boil until tender. Drain, and return carrots to pan.

Pour orange juice over carrots, and mix well. Simmer over medium heat for about 5 minutes. Stir in brown sugar, butter, and salt. Heat until butter and sugar melt.
