Hi Donna,

Did you ever eat the top of the beets.  They better for you then the beet.  I have made them with a sweet and sour dressing and just put the greens and heat until warm.  Very tasty. 

I make pickle eggs, but U an a dumper when it comes to this.  You know you do it like your mother did it.  I will try to give you about amt.

1 doz eggs

juice from 1 pint or 1 can

about 1/4  cups  sugar

1/2 teaspoon salt

2 tablespoons so vinegar

a couple shakes of cloves or allspice

heat and pour over hard boiled eggs

Do the taste test it should be a little on the sour side.

Make 3 days ahead for best flavor

Donna I hope this is helpful, it is hard when you just dump and taste for the flavor.

You are welcome, Gaby. I am the only one in my immediate family who likes pickled beets and eggs. My sisters like them, too, but they live in another state so we don't get to eat together very often.

Hi Carla,

Welcome to the recipe exchange forum! I am going to have to research what foods are considered non-inflammatory for arthritis. My knees, back, and right hand have been really painful lately. I can't jump at all, much less jump like Nick's house, lol. :)

Thank you for the recipe, Myrna. I am anxious to try it. As far as eating the greens from the beets, I did not know that they are edible! I am learning something new all the time from my Adlandpro friends! We always threw the green tops away.

I know my mother probably just used the same method as you, a little of this, a pinch of that, etc. until it looks just right!
