The chicken dish is VERY simple and has MANY variations.
All require a paste or filling.
Two simple ways to do this:
1) Take chicken breast fillets and cut a pocket in them
or
2) Spread the paste or filling onto breast fillets, then , roll up.
Roast as you would normally and serve with mediteranean vegetables, with pasta or with a warm salad.
Fillings can be:
Sun-dried tomatoes with chopped mushrooms.
Sun-dried tomatoes with a soft cheese (goats cheese is delicious), a soft blue cheese or mozzorella etc.
Sun-dried tomatoes with a tofu product
etc.
