I am glad you are enjoying the health articles. I appreciate your positive comments.

Thank you for verifying the healthiness of the Mediterrean diet. It sounds like you eat healthy foods and set a good example for some of us, myself included.  I think I will incorporate more lentils and chick peas in my diet, per your suggestion. I am not a big fish lover but am trying to eat it more often.

Hi Rinna,

That is a great point...always change your diet gradually, just as you start exercising gradually, baby steps...in both cases. Add more of the good foods as you decrease the unhealthy foods. It takes your body time to adjust to changes of any kind.

Hi Donna,

Dont worry about the fish.  Many of us from northern climes or brought up inland do no have much of a fish eating tradition at home.  Having said that, when you have eaten a piece of grilled bream, fresh from the sea , with a little garlic and some herbs, it makes you wonder what you ever saw in meat!

One of the biggest factors in the mediterrean diet is the use of olive oil, which is cheap in Spain and Italy, which are both big olive growers.  It can be expensive in some countries, so you can mix it with another unsaturated oil, like sunflower oil, to economize when cooking.  With salads, it is worth the extra expense.

Garlic is also a great antioxidant, and can be added to "pot" cooking whole instead of chopped.  The flavour it gives is slightly sweet and totally different than the "garlicky" taste of chopped garlic.

So enjoy your healthy eating!

HI Jenny,

Thank you for the good tips. I use olive oil but have read that you shouldn't use it at high temperatures. I have sauteed with it. I never thought of combining it with another unsaturated oil, so am interested to see how that works.

I love garlic but seldom buy the whole garlic. I buy the bottle of small chopped garlic. I will try to get some garlic cloves and see how that works in my dishes.
