How nice to see you.  It is my pleasure to feature Phil, and with his wonderful recipes, I think he will be a general contributor.  I sure get a lot of pointers from him and his recipes are absolutely delicious!

Wow!  This made me hungry for chicken and it's early early morning!  Chicken for breakfast?  LOL!!!!

Hi Joe,

Thanks for stopping by to visit.  Funny you should mention Chicken for Breakfast.  Now I wouldn't suggest using leftovers from the Chicken Curry, however, if I have some Baked or Fried Chicken left over from the previous night, I have been known to make this tasty little Breakfast Casserole...

1 (10.75 ounce) can condensed cream of chicken soup

1 (16 ounce) container sour cream

1 (2 pound) package frozen hash brown potatoes, thawed

1 cup cubed, cooked chicken meat

1 cup diced ham

1 onion, chopped

3/4 cup shredded Cheddar cheese

1 cup crushed potato chips

1/4 cup butter, melted

Combine undiluted soup, sour cream, hash browns, cubed chicken and ham, onions, and cheese. Pour into a lightly greased 9 x 13 inch pan.

Bake at 350 degrees F (175 degrees C) for 30 minutes. Top with crumbs, and drizzle with melted butter or margarine. Bake for another 15 minutes till lightly browned. 

Serves 8 Normal Appetites or 4 Hearty Appetites.

Scramble up some Eggs with Cheese, add a glass of Orange Juice and good cup of Coffee and you probably won't need Lunch.  Plus you don't have to worry about that Chicken going bad in the Fridge.
